Mail Order
- How do I determine the type of hors d'oeuvres
to serve? First know your customer in advance. Do they
have any food restrictions or allergies to any food products? Most
items can be served for any occasion, however, for brunches,
quiche, canapés and salmon products work well. For elegant
functions, stay with items that do not require frying.
- How many hors d'oeuvres should be served if
all I am serving is hors d'oeuvres? Allow at least 8 to
10 per person.
- How many hors d'oeuvres should be served if I
am also serving dinner? At least 4 to 8 per
person.
- How should hors d'oeuvres be served?
Most hors d'oeuvres are best served "Butler Style" passed around
on decorative trays. Some items can be held in a chafer, these
include, bacon wrapped items, quiche, egg rolls, and crab rangoon.
Cold canapés are best arranged on decorated mirrors and trays on
the buffet table.
- How many varieties should be served for an
occasion? At least three to six different types of hors
d'oeuvres and canapés should be considered to provide a variety of
flavors, shapes and textures. A good mix would consist of puff
pastry items, fillo items, bacon wrapped and skewered items. Also
consider a variety of Mexican, Italian, and Oriental items - a mix
of ethnicity.
- Do I have to defrost the products before I
cook them? Follow the directions carefully. Cold canapés
and finger sandwiches do not have to be cooked at all, just place
on decorative trays to thaw out for 1 - 2 hours.
- How do I achieve that memorable party -
soiree? Provide a congenial atmosphere or theme and
make your serving trays beautiful and different. It is very
important to coordinate the "total" look by balancing plates of
different colors, shapes and variety. Use attractive and unusual
trays, platters or mirrors and garnish with fresh flowers, leaves
and herbs, or create your own special look.
